Oops...I didn't see that only had 12 minutes left when I started looking through my recipes. So, I only got to post one of them, eggplant parmesan, but at least it is one of my favorites! I started out life 2 weeks late and I have been running behind ever since. Hmm...suddenly my whole life now makes sense...
