Good Saturday morning to y'all! We here at Country Cooks have been so excited to write this post today! Back in July, a representative from Eggland's Best Eggs contacted all three of us and asked if we would be interested in hosting a 'Plate Date' for some of the children and parents in our area. The Plate Date would serve as a time to teach some of the local parents and their children how to make simple recipes in the comfort of their own home. Recipes that would ease the chaotic morning routines going on through most of the households in America due to the new school year starting.
Below are some highlighted dishes that we made from each of our Plate Dates :)

Marsha's Dish
You're gonna love this tasty dish.....I found it in a Cooking with Paula Deen magazine and feel like I've 'struck gold' with this one!
BAKED WAFFLES WITH RASPBERRY CREAM CHEESE
8 frozen buttermilk waffles
4 Tb. (1/3 red. fat) cream cheese, softened (I use 6)
1-1/2 c. sliced fresh raspberries (or strawberries)
1-1/4 c. milk
6 lg. eggs
1/4 c. maple syrup (may use sugar free)
1/2 c. firmly packed brown sugar
(may use brown sugar blend)
1/2 c. butter
Garnish: fresh raspberries
Preheat oven to 350. Arrange waffles in a single layer on a baking sheet. Toast for 10 minutes or until lightly browned. Spray an 11" X 8" baking dish with non-stick cooking spray. Line waffles in a single layer on the bottom of dish. Spread cream cheese over waffles. Top with raspberries. Arrange remaining waffles over raspberries. In a small bowl, whisk together milk, eggs, and maple syrup. Pour mixture over waffles. Cover and chill overnight.
Preheat oven to 375. In a small saucepan, whisk together brown sugar and butter over medium high heat until sugar dissolves and butter melts. Pour over waffles. Bake for 25 - 30 minutes or until set in the middle. Remove from oven; let stand 10 minutes before serving.
Top with additional raspberries if desired.

Lark's Dish
I live in a very small town. I am not fortunate enough to have a Farmer's Market to visit. So I do the next best thing.....Go out into my yard and pick it fresh from my garden. Anyone who has ever had a garden before knows, if you plant 1 squash plant you get 3. You always seem to have more than you know what to do with. This is how this recipe was born.
"Farmers Market" Omelet
1 small Zucchini-diced
1 small Crook Neck Squash- diced
1/4 C. White Onion-diced
1/3 C. fresh Mushrooms-diced
1 Med. fresh Garden Tomato-diced
3 TBSP I can't believe it's not butter
3 Lg. Eggland's Best eggs
2 TBSP Milk
Salt and Pepper to taste
1 tsp. Frank's Hot Sauce
1/4 C. Shredded Cheese
Place the squash, onion, mushrooms, tomato and the I can't believe it's not butter spread in a saute pan. Cook until tender. Drain on a paper towel. In a bowl combine the Eggland's Best Eggs, milk, salt, pepper and hot sauce. Beat until well blended. Pour into a lightly sprayed saute pan.
cook until center is set, then flip to other side. Sprinkle on the sauteed veggies and cheese on. Fold in have and let cheese melt. Serve hot.
*You can add what ever fresh veggies you have on hand, or diced meat if desired.*

I chose to make a Sausage, Egg, and Cheese Pizza for the parents of the Plate Date. It's quick and simple to put together and ready in 30 minutes flate. Not a sausage lover? Try cooked bacon. Not a meat lover? Keep it all strictly veggies. This recipe also works well with using pizza dough. It's so versatile that it's great for mornings on the go...just place whatever you have in the fridge into the pizza and let it cook....yummm!
Sausage, Egg, and Cheese Pizza
1 (8 ounce) can refrigerated crescent rolls (or pizza dough)
1 pound bulk pork sausage (or 4 or 5 slices of ready cooked bacon or chopped veggies of your choice)
1 cup frozen shredded hash brown potatoes, thawed
1 cup shredded Cheddar cheese
3 eggs
1/4 cup milk
1/4 teaspoon pepper
1/4 cup grated Parmesan cheese
Unroll crescent dough and place on a greased 12-in. pizza pan; press seams together and press up sides of pan to form a crust. In a skillet, brown sausage over medium heat; drain and cool slightly.
Sprinkle sausage, hash browns and cheddar cheese over crust. In a bowl, beat eggs, milk and pepper; pour over pizza. Sprinkle with Parmesan cheese. Bake at 375 degrees for 28-30 minutes or until golden brown. Let stand 10 minutes before cutting.

I love to make a strata with all the summer veggies...zucchini, yellow squash, tomatoes....add ham, top with cheese, and cover it all with a mixture of eggs and evaporated milk. It sits in the fridge overnight, and pops into the oven the next morning for a quick, easy breakfast!!

My favorite egg dish to make in the summer is fried okra and or fried zucchini (egg is used in the batter)! It is the thing to do with these fresh garden veggies. I just made a fried okra salad this past week which was a huge hit! You mix a salad of tomato & onions in a EVOL/Vinegar marinate. Then fry and crumble bacon and toss in with veggies. Then fry your okra and toss in with the above and eat right away. Top notch salad.

We love egg salad in the summer. Nothing better than a good egg salad sandwich with bacon on top.
Summertime means lots of picnics, and so I am always making Deviled Eggs! I personally like them with green olives, but that isn't for everyone!
I already follow on Google Connect. My favorite dish is Deviled Eggs, Oh how I love deviled eggs. Easy and quick and a great easy take along to potlucks.

my favorite summer dish that i make w/eggs is zucchini fritters the other dish is punch bowl cake..eggs are used in the cake and the custard :) !!!
My favourite summer egg dish is the Easy Garden Bake, from Pillsbury's. It's a crustless quiche with zucchini and tomatoes. YUM!!

My family's favorite summertime egg dish - good ol' fashioned deviled eggs.
I have guardianship of my two granddaughters 4 and 6. I only buy Egglands Best because the girls LOVE eggs! Our fav this summer has been deviled eggs, but they eat the boiled eggs before I devil them! They also beg me for scrambled egg and cheese!
